Genoise Sponge

Tools –

One 8” or 9” round cake pan

Parchment paper

Mixer with whisk attachment

Bowls for ingredients

Sifter

Rubber spatula

Measuring cups and spoons

 Cake tester or toothpick

Straight edge spatula or thin knife

Ingredients –

 3 large eggs

 ¼ cup + 2 Tablespoons granulated sugar

½ cup + 2 Tablespoons cake flour

3 Tablespoons unsalted butter, melted

Directions

1. Preheat oven to 350°F. Butter and flour cake pan and line with parchment.

2. Melt butter in microwave for about 30 seconds, or until fully liquid, and set aside.

 3. In a large bowl whisk together the eggs and sugar. Whip for about 5 minutes until ribbon stage.

 4. Sift the flour and fold into the egg mixture just until combined. Careful not to over mix and deflate your batter.

 5. Take about 1/5 of the mixture and add it to the melted butter. Mix until completely combined.

6. Add the butter mixture back into the large bowl and fold in just until combined. 7. Immediately transfer batter to your prepared pan and place in oven on the middle rack. Bake for 20-25 minutes or until cake is done. A toothpick inserted in the center should come out clean. 8. Allow cake to cool for 5 minutes in the pan and then remove to cool completely.
