Chocolate Olive
Oil Cake
Tools –
Two 8 or 9-inch round cake pans
Parchment paper
Large mixing bowl
Sifter
Bowls for ingredients
Rubber spatula
Wire whisk
Measuring cups and spoons Ingredients
3 cups all-purpose flour
2 cups granulated sugar
½ cup natural
unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
2 Tbsp vinegar- apple cider or white
2 tsp vanilla extract
2/3 cup olive oil-preferably extra virgin
2 cups cold water
Directions 1.
Preheat oven to 350° F. Oil cake pans and line with parchment paper.
2. Measure out all dry ingredients and sift into a large
mixing bowl.
3. Make a well in the
center of the dry ingredients and add the wet ingredients.
4. Stir the batter until well combined, whisk if necessary.
5. Divide the batter evenly between the two cake pans. Bake
cakes for 25-30 minutes on the middle rack. A toothpick inserted in the center
should come out clean or with just a few crumbs clinging to it.
6. Cool cakes in their pans completely before removing.
